50% Chardonnay planted on sandstone and lime, 50% Pinotage on Koffieklip. The elevated Stanford Foothills at the base of the Klein River Mountain is exposed to the full force of both the South Easter and Westerly winds which carry icy and salty air off the ocean. These cooler growing conditions are perfect for sparkling wine.
Méthode Ancestrale, more commonly known as Pét Nat is the Ancient Method of making sparkling wine: The process involves a single fermentation, as opposed to the Champagne or MCC Method in which more sugar and yeast are added at bottling.
