THISTLE & WEED Knapsekêrel Cabernet Franc 2022

Kept modest, to allow the site to speak. Handpicked grapes, 15% incorporated as whole bunches, were naturally fermented in open top vessels with regular punch downs before being basket pressed. The wine was matured in stainless steel tanks for 8 months before bottled unfined and unfiltered. 

 

 

Dried thyme, violet, blackberries and glazed cherry on the nose. Influence of the whole bunch ferment is evident, a light palate, concentrated fruit flavours juxtaposed with chalky tannins. Major aging potential.
