The grapes were harvested in mid February. Whole bunches were gently pressed. The juice was seNled in tank overnight before being racked to barrel. VinificaQon and ageing took place in ancient 600L French oak casks. The wine was aged in barrel on the lees for 6 months before boNling. The fruit was handled with respect to reflect its origin in St Helena Bay, West Coast.
