pH WINES Pet Nat 2022

PET NAT, also known as Méthode Ancestrale is a wine that is bottled at the end of fermentation while there is still a tiny bit of grape sugar left to be fermented by the indigenous yeast. This means that the last phase of fermentation takes place inside the bottle which produces the yummy bubbles ! No added sugar. No added yeast. Just Love. What?! Pétillant Naturel. A very natural style of sparkling wine! We bottle the wine, while it is still fermenting (right at the end of fermentation), to ensure the right amount of bubbles in the bottle. It is nerve recking, as the yeast is natural and you have to pray that the fermentation actually finishes...

The main grape is BUKETTRAUBE, a beautiful muscat-like flavours featuring apricot and pears! This grape variety is low-key and old fashioned as it is traditionally used (mainly in South Africa) for semi sweet and sweet wines. But, this year, we are playing with Sauvignon and Chenin, making this wine a bit more punchy and crispy!

The PhD 22 shows a nose of apple, apricot, tropical fruit, lemon, candy, and fresh fermentation aromas. The palate is lively and crisp with honeysuckle, floral and grapefruit notes supported by very subtle bubbles and some nice tanins from the skin contact.

When to drink: Morning, Noon and Night. Chilled and with your favourite friends.
