ANGUS PAUL Mesas Chenin Blanc/Muscat 2021

Hand picked and cooled overnight. Half of the grapes were pressed directly to barrel, whilst the other half were fermented on the skins and whole bunches for around 10 days. This blend is 61% Chenin blanc & 39% Muscat blanc. Both varieties were treated the same.

After draining the macerated portion, the remains were pressed to old wooden barrels. A spontaneous malolactic fermentation then took place, and in early Autumn wines were sulphured for the first time. Wines were bottled in September 2021 after having spent 8 months in barrel with no racking.

Muscat’s grapey signature proceeds from the glass, accompanied by a very distinct apricot yoghurt character. Beneath are citrus and stone fruits. The palate is bone dry with a mild phenolic grip that lends to the refreshment factor. Serve chilled.
