  • The bunches were destemmed and fermented in a small 1.4 ton open fermenter tank for the whole duration of primary fermentation with light extraction on the skins once a day. After the wine was dry the skins and wine were moved to open top barrels and the barrels tops were put back on. The wine spent 90 days on the skins in the barrels until it was pressed at the end of May. The wine gets bottled in the same year at the beginning of summer.

    The grapes are grown in the Olifantsrivier district on the West Coast of South Africa. The soils are loamy alluvial soils with a high salinity and an average annual rainfall of only 160mm in the area. These vineyards are trellised vines.

    During harvest the grapes were picked early for freshness, natural acidity and lower alcohol levels. No additives are used in the production of L EQUINOX WINES except a small dose of sulphur.
